A hearty fish soup made from Congrio, onions, tomatoes, and potatoes, often with a dash of white wine. Pablo Neruda dedicated his "Oda al caldillo de congrio" to it in his Odas elementales, which made the dish famous far beyond Chile. It is served hot, frequently in clay bowls, in harbor pubs and market restaurants along the coast.
