Surströmming is fermented Baltic herring, a traditional dish primarily from northern Sweden. Opening the can releases a very intense odor, which is why it is usually opened outdoors. The season traditionally begins at the end of August. It is often eaten rolled in tunnbröd (thin flatbread), with small almond potatoes, red onions, and sour cream.
