    Cochinita pibil

    Slow-braised pork from Yucatán

    About Cochinita pibil

Yucatán's achiote-marinated pork stew, wrapped in banana leaves, traditionally cooked for three hours in a Pib—an earth pit with glowing stones. Served with red onions pickled in bitter orange juice and Habanero. On the Yucatán Peninsula, Cochinita pibil is traditionally eaten on Sunday mornings and holidays.
