The Bistecca alla Fiorentina is a thick T-bone steak from the loin with bone, about two fingers high, preferably from local breeds like Chianina cattle. It is grilled quickly and hot over embers without an open flame, heavily seared on the outside and served rare (al sangue) on the inside. Only the already cooked side is salted; when served, pepper and often a little olive oil are added. A piece often weighs a kilogram or more; you'll find it primarily in Florence and Tuscany.
