    Mole negro

    Black Chili Sauce from Oaxaca

    About Mole negro

The almost black, thick Mole negro is one of the seven classic moles from Oaxaca. Roasted Chilhuacle, Pasilla, and Mulato chiles are processed with nuts, seeds, spices, and dark chocolate, then simmered for several hours. In Oaxaca, it often tops turkey and is also found in Enmoladas and Tamales.
