Sheep's offal with oats, onions, and spices, traditionally cooked in the animal's stomach, today usually in an artificial casing. This is accompanied by turnip and potato mash. For the Burns Supper on January 25th, the Haggis is ceremonially sliced during the recitation of Robert Burns' Address to a Haggis. Vegetarian versions with lentils and nuts are common.
