The Arancini are fried, breaded rice balls from Sicily and a popular street food. The name derives from the orange (arancia), which their shape resembles: In Palermo they are round and called arancine, in Catania conical and called arancini. Classically, they are filled with Ragù and peas, or as an al burro variation with ham, cheese, and Béchamel. Vegetarian options include, for example, spinach and mozzarella.
