Shellfish, meat, sausages, potatoes, and potato flatbreads are cooked in an earth pit over hot stones, covered with Nalca leaves. The dish originates from the Chiloé Archipelago and is a communal event there, lasting for hours. In restaurants, the pot version, Pulmay, is often served when an earth pit is not available.
