The Tlayuda from Oaxaca is a corn tortilla, often more than 30 cm in diameter, crisply toasted on a comal. It is spread with asiento (pork lard), black beans, and quesillo, Oaxaca's string cheese, then topped with tasajo, cecina, or chorizo and crisp-grilled over embers. It is served with lettuce or cabbage and a salsa from the molcajete.
