The original Paella comes from the Huerta around Valencia and is cooked with chicken, rabbit, green beans, white Garrofó beans, saffron, and round-grain rice in a shallow pan. Seafood belongs in Paella de marisco, not in the Valencian version. The slightly toasted bottom, the Socarrat, is highly prized. In Valencia, Paella is traditionally eaten at lunchtime.
