Risalamande is the classic Danish Christmas Eve dessert: cold rice pudding with vanilla, whipped cream, and chopped almonds, served with warm cherry sauce. A whole almond is hidden in the bowl; whoever finds it receives a small gift (mandelgave). The name comes from the French "riz à l'amande".
