An upside-down apple tart, named after the Tatin sisters, who ran a hotel in Lamotte-Beuvron, south of Orléans, at the end of the 19th century. The apples are caramelized in butter and sugar, covered with pastry, and baked; after baking, the mold is inverted. A spoonful of Crème fraîche pairs perfectly with it.
