Beef is marinated for days in a vinegar marinade and then braised in it. In the Rhineland, the sauce is sweetened with raisins and Printen; in Swabia, it's served with Spätzle; in Thuringia, with dumplings. Classic sides include red cabbage and potato dumplings.
