Okonomiyaki

A pancake made from batter and white cabbage, topped with pork, seafood, or cheese, and garnished with sweet-savory sauce, mayonnaise, and bonito flakes. In Osaka, everything is mixed and fried; in Hiroshima, it's layered with noodles. Often, you cook it yourself on the hot plate at your table.
