Fish cakes are pan-fried fish patties made from finely chopped white fish, usually cod or pollock, with onion, egg, and a little flour. They are golden brown on the outside and fluffy on the inside. You eat them warm with remoulade and potatoes or cold on rye bread as Smørrebrød, often with a slice of lemon.
